Abstract
Viinamarjakasvatuses on vajalikud talvised- ja suvised hoolduslõikused, mille tulemusel tekib suurtes kogustes biojääke (viinapuu lehed, võrsed, oksad), mis tavaliselt põletatakse, põhjustades negatiivset mõju keskkonnale. Magistritöö eesmärgiks oli välja selgitada Eestis avamaal kasvatatavate viinapuu sortide lehtede ja silo biokeemiline koostis. Katse viidi läbi 2021. aastal Tartumaal, EMÜ Rõhu Katsejaama katseaias avamaa tingimustes tootmisistandikus ja katses olid sordid ‘Hasanski Sladki’ ja ‘Zilga’. Katse tulemused näitasid, et lehtede biokeemilist koostist mõjutasid sordiomadused ja lehtede eemaldamise aeg. Sügisel korjatud lehtedes oli bioaktiivsete ühendite sisaldus suurem mõlemal sordil, suvel korjatud lehtedel aga sordil `Zilga`. Sileerimine avaldas positiivset mõju viinapuu lehtede polüfenoolide sisaldusele välja arvatud kvertsetiin O-glükosiidile, mille sisaldus oli oluliselt suurem sileerimata viinapuulehtedes.
 
Viticulture requires winter and summer pruning for vineyard maintenance, which results in large amounts of bio-residues (leaves, shoots, branches). Generally, these residues are burned, which in return causes negative impact on the environment. The aim of the master's thesis was to find out the biochemical composition of the leaves and silage of the most common vine cultivars in Estonia. The experiment was carried out in 2021 in Tartu county Estonian University of Life Sciences at Rõhu Experimental Station in the openfield vineyard. Experiment focused on locally cultivated vine cultivars ’Hasanski Sladki’ and ’Zilga’. The results of the experiment showed that the biochemical composition of the leaves was influenced by the cultivar characteristics and the time of leaf removal. The leaves harvested in autumn had more bioactive compounds in both cultivars, while the leaves harvested in summer had more compounds in the cultivar ’Zilga’. Silage had increased effect on the polyphenol content of the vine leaves, with the exception of quercetin O-glycoside, which had a significantly higher content in the dried vine leaves.
