Eesti, Norra ja Taani päritolu õunte erinevatest sortidest pressitud mahla kvaliteet ja meeldivus Eesti tarbijale - pilootuuring

Abstract
Eestis on varasemalt uuritud tarbijate eelistusi õunte osas, kuid seda, missugused õunamahlad Eesti tarbijatele meeldivad, ei ole uuritud. Seetõttu oli käesoleva töö eesmärgiks selgitada välja, missuguse mahla kuivaine ja orgaaniliste hapete sisalduse ja suhtega mahl meeldib Eesti tarbijatele enim. Uuringus kasutati järgnevatest õunasortidest ja järgneva päritoluga mahlasid ‘Liivi kuldrenett’ (Eesti), ‘Krameri tuviõun’ (Eesti), ‘Talvenauding’ (Eesti), ‘Aroma’ (Taani), ‘Ahrista’ (Taani), ‘Discovery’ (Norra). Tegemist oli pilootuuringuga: mahlasid hindasid 95 inimest vanuses 12 – 78 aastat. Tarbijad hindasid mahlade magusust, hapusust ja meeldivust, lisaks määrati instrumentaalselt mahlade orgaaniliste hapete ja mahla kuivaine sisaldus. Tööst selgus, et tarbijad hindasid meeldivamaks mahlasid, mille mahla kuivaine ja orgaaniliste hapete suhe jäi vahemikku 19,4 – 20,2. Nii tarbijate poolt tuntava mahla magususe kui ka hapususe ennustamiseks oli parim näitaja mahla kuivaine ja orgaaniliste hapete suhe. Seos inimese poolt tuntava mahla hapususe ja mahla kuivaine orgaaniliste hapete suhte vahel oli tugevam kui hapususe ja orgaaniliste hapete sisalduse vahel. Eestist pärit õunte puhul ei esinenud õunamahlade meeldivuses vanusegruppide vahel erinevusi. Taani päritolu ’Aroma’ ja ’Ahrista’ mahl meeldis 12 – 13-aastastele oluliselt enam kui kõige vanemale vanusegrupile. ’Aroma’ ja ’Ahrista’ puhul oli tegemist teiste sortide mahladest magusamate mahladega, mis võib olla põhjus, miks lapsed neid kõrgemalt hindasid kui vanemad inimesed. Käesoleva töö tulemused annavad õunamahla tootjatele infot, missuguse mahla kuivaine ja orgaaniliste hapete suhtega õunamahla Eesti tarbijad eelistavad ja missugustest sortidest pressitud mahl on soovitavate omadustega.
 
Apple preferences of Estonian consumers have been studied recently, but there is no information about apple juice preferences of Estonian consumers. Therefor the aim of this study was to find out the characteristics of apple juices which are liked by Estonian consumers. The hypothesis was that consumer liking can be predicted based on juice soluble solids content and titratable acidity and soluble solids/ titratable acidity ratio. Following cultivars from following countries were used in the experiment: ‘Liivi kuldrenett’ (Estonia), ‘Krameri tuviõun’ (Estonia), ‘Talvenauding’ (Estonia), ‘Aroma’ (Denmark), ‘Ahrista’ (Denmark), ‘Discovery’ (Norway). It was a pilot study: juices were evaluated by 95 consumers at the age from 12 to 78. Consumers evaluated sweetness, sourness and overall liking of the juices; additionally soluble solids content and titratable acidity were determined instrumentally at the laboratory. Juices with soluble solid and titratable acidity ratio between 19.4 and 20.2 were rated most pleasant by the consumers. The best predictor for sweetness and sourness was soluble solids and titratable acidity ratio of the juice. Correlation between sourness felt by consumers and soluble solids/titratable acidity ratio of the juice was stronger than between sourness and content of titratable acidity. There was no significant liking difference between age groups of apple juices pressed from Estonian cultivars. However, children at the age of 12 – 13 liked Danish ’Aroma’ and ’Ahrista’ juices more than the oldest consumers. This result can be related to the fact that the named juices were the sweetest. The results of the study give information to the apple juice producers, what kind of soluble solids/titratable acidity ratio is more liked by Estonian consumers and which cultivars can be produced into the juice with desired properties.
