Abstrakt
Arooniates ja viinamarjades on rohkesti fenoolseid ühendeid, millel on potentsiaalne
positiivne mõju inimese tervisele. Fenoolsete ühendite sisalduse poolest ületab must
aroonia mitmeid rohkem tuntud kultuure. Eestis kasvanud viinamarjadest valmistatud
veinid sisaldavad kõiki tähtsamaid punastes veinides leiduvad polüfenoolseid ühendeid
ning nende sisaldus on võrreldav maailmas levinud punaste veinide omaga.
Töö eesmärgiks oli välja selgitada sordiomaduste mõju arooniate ja viinamarjade
tehnoloogilisele ja fenoolsele küpsemisele ning veinide biokeemilisele koostisele.
Uurimistöö viidi läbi 2017. aastal Ulge talus Jõgevamaal ning Eesti Maaülikooli Rõhu
katsejaamas Tartumaal. Katses kasutatud sordid olid viinamarjasort ´Hasanski Sladki´,
arooniasordid ´Nero´ ja ´Galicjanka´ ja aroonia seemiktaim.
Chokeberries and grapes are rich in phenolic compounds which have potential health benefits. Comparing to other well know fruits, chokeberry fruits are the richest source of phenolic compounds. Wines made from grapes grown in Estonia contain all important polyphenolic compounds which are found in red wines as well as their content is comparable to widespread red wines. The aim of the current study was to determine the effect of cultivar characteristics on the technological and phenolic maturation of chokeberries and grapes and biochemical composition of wines. The research was carried out in 2017 at Ulge Farm in Jõgeva county and in Rõhu Experimental Station of the Estonian University of Life Science in Tartu county. The following species and cultivars were used in the experiment: grapevine `Hasanski Sladki´ and chokeberries `Nero´, `Galicjanka´ and seedling plant.
