Abstrakt
Käesoleva magistritöö eesmärgiks oli hinnata valitud Eestis kasvatatavate õunasortide
sobivust siidri valmistamiseks õunamahla biokeemiliste näitajate alusel. Uuriti mahla
kuivaine, orgaaniliste hapete, pH ja polüfenoolide sisaldust ning selgitati välja sordi ja
kasvuaasta mõju nendele näitajatele.
Uurimistöö viidi läbi Eesti Maaülikooli Polli aiandusuuringute keskuses. Katsesse kaasati
üheksa õunasorti: ’Auksis’, ’Liivika’, ’Maimu’, ’Sandra’, ’Sidrunkollane
taliõun’, ’Sügisjoonik’, ’Šampanjer’, ’Vambola’ ja ’Veiniõun’. Õunamahla biokeemilisi
näitajaid analüüsiti kahel kasvuaastal (2024 ja 2025). Statistiliseks andmeanalüüsiks kasutati
ühe- ja kahefaktorilist dispersioonanalüüsi ning Tukey testi.
Tulemused näitasid, et nii sort kui ka kasvuaasta mõjutasid oluliselt kõiki uuritud biokeemilisi
näitajaid. Enamiku sortide mahla kuivaine sisaldus vastas siidri valmistamiseks soovitatud
vahemikule (11–15 °Brix). Orgaaniliste hapete sisaldus ja pH väärtus varieerusid sortide
lõikes märkimisväärselt ning kõik sordid ei vastanud mõlemal kasvuaastal siidri
valmistamiseks soovitatud optimaalvahemikele. Kõrgema happesisaldusega eristusid
sordid ’Šampanjer’ ja ’Sidrunkollane taliõun’, samas kui sorti ’Sandra’ iseloomustas
madalam happesisaldus ja kõrgem pH väärtus. Polüfenoolide sisaldus oli enamikul sortidel
madalam kui traditsioonilistele siidriõuntele iseloomulik piirväärtus 200 mg/L, kuid
sort ’Veiniõun’ ületas selle mõlemal kasvuaastal.
Tulemused näitasid, et ükski uuritud sort ei vastanud kõigile siidri valmistamiseks soovitatud
näitajatele mõlemal kasvuaastal. Seetõttu võib tasakaalustatuma siidri valmistamiseks olla
otstarbekas erinevate sortide kombineerimine. Lisaks kinnitas uuring, et kasvuaasta
ilmastikutingimused mõjutavad oluliselt õunamahla biokeemilist koostist.
The aim of this master's thesis was to evaluate the suitability of selected apple cultivars grown in Estonia for cider production based on the biochemical parameters of apple juice. The study investigated soluble solids content, organic acids, pH, and polyphenol content, as well as the effect of cultivar and growing year on these parameters. The research was conducted at the Polli Horticultural Research Centre of the Estonian University of Life Sciences. Nine apple cultivars were included in the study: ’Auksis’, ’Liivika’, ’Maimu’, ’Sandra’, ’Sidrunkollane taliõun’, ’Sügisjoonik’, ’Šampanjer’, ’Vambola’, and ’Veiniõun’. The biochemical parameters of apple juice were analysed over two growing years (2024 and 2025). One-way and two-way analysis of variance (ANOVA) and Tukey’s test were used for statistical data analysis. The results showed that both cultivar and growing year significantly affected all analysed biochemical parameters. The soluble solids content of most cultivars corresponded to the recommended range for cider production (11–15 °Brix). Organic acid content and pH values varied considerably among cultivars, and not all cultivars met the recommended optimal ranges for cider production in both growing years. Cultivars ’Šampanjer’ and ’Sidrunkollane taliõun’ were characterised by higher acidity, whereas cultivar ’Sandra’ showed lower acid content and higher pH values. The polyphenol content of most cultivars remained below the 200 mg/L threshold characteristic of traditional cider apples; however, cultivar ’Veiniõun’ exceeded this threshold in both growing years. The results indicated that none of the studied cultivars met all recommended parameters for cider production in both growing years. Therefore, combining different cultivars may be advisable to produce a more balanced cider. In addition, the study confirmed that weather conditions during the growing year significantly influence the biochemical composition of apple juice.
