Abstrakt
Magistritöö eesmärgiks oli selgitada lehtede eemaldamise mõju veiniviinamarja sortide
`Hasanski Sladki` ja `Zilga` küpsusparameetritele. Magistritöös püstitatud hüpoteesiks oli, et
lehtede eemaldamisega saavutatakse parem valgustatus ja õhustatus vilikondade tsoonis, mis
mõjutab marjade küpsemist ja biokeemilist koostist. Samas aga sõltub defoliatsiooni mõju
lehtede eemaldamise hulgast ja ajast ning sordiomadustest.
Viinamarjade mahla kuivaine sisaldust ei mõjutanud katse keskmisena lehtede eemaldamine,
vaid hoopis sordiomadused. Sordil `Zilga` olid kõik katsevariandid soovitatud kuivaine
sisaldusega, mida aga ei saavutanud sort `Hasanski Sladki`. Lehtede eemaldamine marjade
värvumise alguses vähendas orgaaniliste hapete sisaldust ja mõjus positiivselt küpsusindeksile
(°Brix × pH2
). Lisaks mõjutasid küpsusindeksit ka sordi-omadused: vaid `Zilga` saavutas
soovitatud taseme. Mahla pH oli mõjutatud lehtede eemaldamisest ja jäi kogu katse piires
soovitatud vahemikku. Lehtede eemaldamine avaldas positiivset mõju sordi `Hasanski Sladki`
kuivaine ja hapete suhtarvule, kuid `Zilga` puhul suurenes suhtarv ainult mõlemalt poolt lehtede
eemaldamisel. Fenoolide sisaldust mõjutas lehtede eemaldamine sordi piires, kuid katse
keskmisena oluline mõju puudus. Antotsüaanide sisaldus suurenes lehtede eemaldamisel
marjade värvumise alguses ja oli mõjutatud ka sordiomadustest. Sort `Zilga` oli kõrgema
antotsüaanide sisaldusega.
The aim of this Master thesis was to find out the effect of leaf removal on grapevine (Vitis) cultivars 'Hasanski Sladki' and 'Zilga' maturity parameters. In the research a hypothesis was set: with defoliation a better illumination and aeration in cluster zone is achieved, which affects the maturation of the grapes and the biochemical composition. At the same time, the effect of defoliation depends from the amount of removed leaves, from the time and the cultivar characteristics. Defoliation didn`t have effect on the soluble solids content, but the characteristics of the cultivars did. `Zilga` all variants achieved the recommended level, which did not achieved cultivar `Hasanski Sladki` and the lowest result occurred, when leaves were removed from both sides of the cluster. Defoliation at veraison decreased the concentration of organic acids and had a positive effect on maturity index (°Brix × pH2 ). The maturity index was also influenced by the characteristics of the cultivar: only `Zilga` reached recommended level. Defoliation affected juice pH and it was for the duration of the whole test at a recommended range. Defoliation had a positive effect on `Hasanski Sladki` sugar/ acid ratio, but `Zilga` ratio increased only in the case of leaves removed from both sides. Defoliation affected the content of phenolic compounds within the cultivar, but it had no significant impact on the average of the test. Defoliation at veraison increased the anthocyanin content and it was also affected from characteristics of the cultivars. `Zilga` had higher anthocyanin content.
