Abstrakt
Kibuvitsade viljad on hästi tuntud oma tervistavate omaduste poolest ning neid
kasutatakse laialdaselt toiduainete- ja farmaatsiatööstuses. Kurdlehist kibuvitsa (Rosa
rugosa Thunb.) kasutatakse lisaks eelpoolmainitule sageli haljastuses tema hästi lõhnavate
õite ja vähese pretensioonikuse tõttu keskkonnatingimustele. Kibuvitsade viljad
sisaldavad inimtervisele vajalikkke anorgaanilisi ja kasulikke orgaanilisi ühendeid, millest
mitmeid, nagu näiteks askorbiinhapet (C-vitamiini) ja polüfenoole loetakse tugevateks
antioksüdantideks.
Käesoleva töö eesmärgiks oli välja selgitada kasvukoha mõju kurdlehise kibuvitsa viljade
askorbiinhappe, polüfenoolide, makro- ja mikroelementide sisaldusele ning
antioksüdatiivsele aktiivsusele erinevates asupaikades Eestis. Askorbiinhappe sisalduse
määramiseks kasutati DPI-meetodit, polüfenoolide sisaldus määrati Folin-Ciocalteu
meetodiga, antioksüdatiivne aktiivsus amperomeetrilisel ning mineraalelementide
sisaldus aatomemissioonspektromeetriliselt HNO3-ga mineraliseerutud proovidest.
Sõltuvalt kasvukohast sisaldasid kurdlehise kibuvitsa viljad askorbiinhapet 4,1…7,7
mg/g, polüfenoole 2,0…4,0 mg GA/g ja nende antioksüdatiivne aktiivsus jäi vahemikku
2,6…7,6 mg kvertsetiini/100g. Mineraalelementide K, Ca, Mg, P, Zn, Fe, Mn sisaldus
viljades erinevates kasvukohtades varieerus laias ulatuses Antud töö tulemustest saab järeldada, et kasvukoht omab mõju kurdlehise kibuvitsa
bioaktiivsete ühendite ja mineraalelementide sisaldusele. Looduslikest kasvukohtadest on
kõrgem askorbiinhappe ja polüfenoolide sisaldus ning antioksüdatiivne aktiivsus
veepiirile lähemal kasvavate põõsaste viljadel võrreldes metsas kasvavate põõsaste
viljadega. Kõrge kasulike ühendite sisaldus on ka koduaias heades tingimustes kasvavate
kurdlehise kibuvitsa põõsaste viljadel.
Rose hips are well known for their health benefits and widely used in the food and pharmaceutical industry. Rosa rugosa Thunb. is often used as an ornamental plant or in the landscaping, because of its fragrant blossoms and low requirements for the environmental conditions. Rose hips are abundant in required anorganic and beneficial organic compounds, i.e. ascorbic acid and phenolics, which are considered to be strong antioxidants. The aim of the research was to find out the content of ascorbic acid, phenolic compounds and mineral nutrients in the rose hips grown in different habitats in Estonia, and their antioxidant activity. The ascorbic acid content was determined by the DPI method, the polyphenols by the Folin-Ciocalteu method, the antioxidative activity by the amperometric method, and the mineral content by the atomic emission spectrometry of the samples mineralized with HNO3. Depending on the habitat, the rose hips’ content of different parameters was as follows: ascorbic acid 4.1 to 7.7 mg/g, polyphenols 2.0 to 4.0 mg GA/g. Antioxidant activity ranged from 2.6 to 7.6 mg quercetin/100g. Content of K, Ca, Mg, P, Zn, Fe, Mn in the rose hips varied in wide range depending on the habitat. The results of the research show that the habitat has an influence on the content of bioactive compounds and mineral elements in the rose hips. The higher levels of ascorbic acid, total phenolic content and antioxidant activity in the rose hips can be found near the seashore, compared to fruits collected from the shrubs grown in the forest. The home garden good conditions are also beneficial for the health promoting constituents in the fruits of Rugosa rose.
